The MS-Nose

This was developed in-house and allows us to monitor volatile aroma compounds during eating in-nose and in real-time!

Liquid mass spectrometry

We use this to analyse samples of saliva taken from the tongue during eating. In this way we can monitor changes in the non-volatile taste compounds (sugars, acids, sweeteners and bitter compounds etc) over time.
Due to the nature of flavour compounds, our instruments can follow virtually any volatile or non-volatile components. Therefore, we are also equipped to analyse non food and drink systems such as specific drug compounds.

Dynataste

A liquid pumping system that can deliver any combination of flavours to subjects.  Flavours can be changed over time and the subjects perception monitored.

Sensory science centre

We have a modern sensory suite with a trained sensory panel.
